
Mixed Baby Greens with Blackberries and Pecans With Champagne Vinaigrette
This is an elegant salad full of antioxidants, fiber and vitamin E and C. Baby greens and arugula tossed with pecans and berries is a nice light salad to complement a meal. This salad relies on different textures rather than fat for flavor. Sweet, crunchy pecans, peppery arugula, and juicy berries all complimented with a light vinaigrette.

CHAMPAGNE VINAIGRETTE
For the dressing, place vinegar in a non reactive mixing bowl with basil, salt and pepper to taste. Drizzle the olive oil in a slow stream, whisking until the oil is emulsified.
Toss the washed mixed greens with the vinaigrette. Sprinkle with blackberries and pecans and serve.
This is a nice alternative to the usual apple pie. The apple and caramel flavors mix together great!

2 medium tart green apples (peeled, cored, and thinly sliced)
1 pre-made refrigerated pie crust

powdered sugar

3/4 lb boneless skinless chicken breasts
2 bell peppers
2 garlic cloves
1/2 white onion
2 plum tomatoes
15 baby carrots
1/2 cup tomato sauce
1 1/2 cups beef stock
1 teaspoon paprika
1 teaspoon olive oil
1 tablespoon cornstarch
cooking spray
2 tablespoons water
salt (to taste)
pepper (to taste)

Here’s a very nice and easy to make grilled potatoes recipe. The combination of spices gives them just the right flavor!
Weight Watchers Grilled Spicy New Potatoes recipe
Makes 6 servings
Ingredients
2 1/2 lbs small potatoes (washed and cut into bite size pieces)
1 1/2 teaspoons paprika
1 1/2 teaspoons ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon ground fennel
1/2 teaspoon chili powder
1 teaspoon salt (or to taste)
2 tablespoons olive oil
Preparation
1. In a medium bowl, combine the potatoes and 1/2 tablespoon oil.
2. In a separate small bowl, mix the ground cumin, ginger, fennel, paprika, chili powder and salt.
3. Add the spice mix to the potatoes and toss well to coat.
4. Transfer the potatoes to an aluminum foil and seal the packet.
5. Grill the potatoes in foil for about 15-20 minutes (or until just tender).
6. Transfer the potatoes to a serving bowl and drizzle with the remaining 1 1/2 tablespoons oil.
